• 1lb cooked shrimp (peeled and deveined- cut into pieces)1 stalk celery, cleaned and diced1 small onion – diced1 green pepper – diced2 tsp lemon juice6 small tomatoes (ex. Plum tomatoes or small vine ripe tomatoes)½ cup fat free mayo½ cup fat free plain greek yogurtSalt and pepper to taste1 tsp dill
    1. Combine all ingredients EXCEPT the tomatoes in mixing bowl. Refrigerate and chill for an hour.
    2. Cut off the tops of the tomatoes and hollow out the centers; chill until the shrimp mixture is well chilled.
    3. Scoop the shrimp mixture into hollowed out tomatoes and serve.
