• 4 large green bell peppers
    • 1 lb ground turkey/beef/chicken
    • ½ can crushed tomatoes
    • 2 teaspoons chili powder
    • 2 teaspoons cumin powder
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 1 onion, medium size
    • 2 cloves of garlic
    • 1 cup riced cauliflower (optional)
    • 8 oz. fat free shredded cheese (mozzarella)

    Preheat the oven to 400°F (200°C). Cut the peppers in half, discard the seeds and place the peppers in a greased baking dish. Chop onion and garlic finely. Heat frying pan, add the finely chopped onions and garlic  until soft. Add ground beef. Cook until ground beef is cooked through, and add chili, cumin, salt and pepper and then the crushed tomatoes. Simmer for 5 minutes then add in riced cauliflower and let simmer for an extra 5 minutes. Remove from heat and stir in half the cheese. Stuff the peppers with ground-beef mixture, sprinkle cheese on top and return to oven. Bake in oven for another 25 minutes, until the cheese has melted.

    Serve with a green salad.
