• 4 chicken breasts (boneless/skinless)

    ¼ cup Parmesan Cheese (grated)

    ½ cup fat free mayonnaise

    1 tbsp Dijon mustard

    *1 tsp finely chopped cilantro (or any herbs you enjoy) OPTIONAL


    Mix together Parmesan, mayo and Dijon together. Grill chicken on the grill ( til almost done). Remove from grill (and lower the heat on grill if using gas grill) and coat tops of chicken in mixture (almost ¼ cup on each for large chicken breasts).  Replace chicken on the grill and close lid for 10-12 minutes til a crust forms. (If using charcoal grill place chicken around edge of grill where it isn’t as high a temperature)
