- 4 Egg whites – or 1/2 cup Egg Beaters-whites
- 1 tsp Extra Virgin Olive oil
- Salt and pepper – to taste
- 1 oz Prosciutto – cut into small pieces
- 1 tbsp Low-fat feta
- In frying pan, drizzle olive oil, add eggs, prosciutto, salt and pepper to taste and scramble.
- Add cheese and heat slightly until softened or melted.
