For Cucumber prep:
16-20 cucumber slices (¼ inch thick)
2 tbsp fresh squeezed lemon juice
½ tsp sea salt
½ tsp pepper
1/3 cup chopped cilantro
** Mix ingredients in large bowl.
Cover and refrigerate until ready to serve**
Blackened Shrimp Prep:
2 tsp paprika
2 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp sea salt
1 tsp pepper
1 tsp dried ground Thyme
1 tsp dried ground oregano
½ to ¼ tsp cayenne (to taste)
½ to ¼ tsp red chili flakes (to taste)
***You may also use any Blackening Seasoning if you do not have all the ingredients or want to make it a little easier for yourself***
**Combine all seasonings in bowl**
16-20 large deveined shrimp (tail on – about 1 ¼ lb)

Instructions
- Lightly coat shrimp with cooking/butter spray. With only a few at a time place shrimp into blackening seasoning and coat all over. Set aside and repeat until all shrimp are coated with seasoning.
- Coat a large heavy skillet with cooking spray, heat up to medium heat. Place a few shrimp (don’t crowd shrimp in pan) and sear on each side for 1 ½ min each side. Remove from pan and set aside. Repeat till all shrimp are cooked and recoat pan with cooking/butter spray as needed to keep shrimp from sticking..
- Serve the blackened shrimp with cucumbers on the side or serve a shrimp on top of a slice of cucumber for easy eating.
